この体験では、緑豊かな山々に囲まれた築150年の古民家なじくぼにて、藤野地区の浄光寺の住職を迎え、心を静める坐禅と、精進料理の作り方を学びます。坐禅は、自己を見つめ、心を落ち着かせるための日本の伝統的な瞑想法です。坐禅の後には、世界的にも珍しい日本料理の「口内調理」の文化に触れ、仏教のベジタリアン料理である精進料理の奥深さを体験できます。
日本料理の独自性:
日本料理には、様々な食材を口の中で組み合わせて完成させるという独特の食文化があります。欧米で見られるワインと食事のペアリング文化のように、精進料理を通じて和食の深い魅力を体験していただきます。
季節のあわせた地元食材と精進料理体験:
季節の野菜や柚子など、地元の食材を活かした精進料理を、地元の食材に精通したスタッフと一緒に作ります。

In this experience, you will be welcomed to a 150-year-old traditional house surrounded by lush green mountains in Fujino District, where you will be introduced to the calming practice of Zazen (seated meditation) and learn the art of preparing Shojin Ryori (Buddhist vegetarian cuisine). Led by the chief priest of Joukouji Temple, Zazen offers a traditional Japanese method of self-reflection and mental tranquility. This program allows you to experience the unique 'in-mouth cooking' culture of Japanese cuisine, delving into the depth of Shojin Ryori, a vegetarian cooking style rooted in Buddhism.

Japanese cuisine features a unique culinary culture where various ingredients are combined in the mouth to complete a dish. This experience allows you to explore the profound appeal of Japanese cuisine, akin to the pairing culture of wine and food in Western countries, through the preparation of Shojin Ryori.

Together with staff knowledgeable in local produce, you will use regional vegetables and yuzu to create Shojin Ryori, embracing the flavors of local ingredients.
