Main ingredient is Norwegian cod, mainly caught during the seasonally and now famous Lofoten fisheries, annually from January through March. This fisheries has at least 1000years of history dating back to the viking ages.
In North-Norway where I originates from, eating cod for Christmas dinner is the main tradition. This dish uses clipfish which may be utilised in great variety, and for this menu I selected a modern variant.
Eating waffles in Norway goes well with many dishes being a traditional snack itself, and for this particular menu I coming with frozen berries and cream, making a unique taste flavour and overall combination.
