As we have entered in a new year I would like to introduce the very famous recipe of south India " kachche gosht ki biryani " also know as Hyderabad dum biryani. This dish is cooked on special occasions.this dish goes well with raita or yoghurt chutney or mirchi ka salan or baghara baingan(roasted egg plant)

=== Dum biryani(ビリヤニ)
Dum biryani is also know an " "kachche gosht ki biryani" it with either made with chicken meat or goat meat. Here I'm using chicken meat. Kachche biryani is prepared with meat marinated with spices overnight and then soaked in yogurt for an hour before cooking. The gosht (meat) is sandwiched between layers of fragrant long-grained basmati rice (separately half boiled)and cooked on dum.

Mirchi ka Salan is a traditional Hyderabadi dish prepared in weddings and special occasions. It is a spicy dish served with rice or chapati. The mirchi (chili) is cooked in spices and peanut adds a grainy texture to this dish.
