We Iranians like to welcome our guests with a cup of hot tea and Chay darchin warms us up in a chilly weather. In this menu we are going to cook a pure Persian recipe. Iranians like to cook rice and layer it with different vegetables and meat,while the most tasty and desired part of the rice is the bottom layer of it called tah-dig. Since in Tahchin the rice is served upside down and cuts like a cake, we can have our rice cake with a thick tah-dig and eat it. In Azerbayjan province of Iran where I used to live for several years, soup-e jo is a most popular soup, serves along every dish in any formal occasion. Salad Shirazi a simple and tasty salad goes well with all dishes.
